I am by no means an aspiring chef or a food expert, but I do know a thing or two about good home-cookin’. Fast & easy recipes have been my go-to lately! Being a momma with two toddlers who are ALWAYS hungry, I hardly have time to cook an intricate meal. I probably have a max of 20 minutes [MAYBE] to cook or prepare any meals before my littles go bonkers. They love this recipe, & so does my husband! It’s eaten up quicker than the little amount of time it takes me to make it! Seriously, only a few steps!
First, round-up your ingredients & a small/medium sized mixing bowl, depending on how much you are making.
I like to add the chicken first and condiments & other fixins afterwards. If you’re using canned chicken like me, I like to break up the pieces first before adding the condiments. Makes mixing a little easier and is better on sandwiches! Also, don’t forget to drain the excess water from the can before adding to the bowl.
Then add to the bowl your mustard, miracle whip, & sweet relish. Stir until it’s mixed up really well.
Sometimes I just call it a day here, but this recipe is also delicious with some grapes and almonds or any nuts of your choosing.
Cut up your grapes, add your nuts, & stir again until it’s all mixed together and everything is coated.
& there you have it! Easy-peasy chicken salad! You can mix up any of these flavors too. Sometimes I like to use siracha mustard to add a little spice to it. Or if you prefer the taste of mayonaise to miracle whip, you can switch that out too. I know a lot of chicken salad recipes call for some chopped up celery, but I’m not a huge celery fan. But feel free to add a stalk of that in there too if you wish!
I usually serve it with some crackers, pita chips, or on a sandwich! So yummy and is perfect if you’re constantly on-the-go like us! If you have some extra time, you can always use a rotisserie chicken or bake your own chicken breasts and shred them up!

Easy-Peasy Chicken Salad
Ingredients:
- 1 12.5 oz can of cooked chicken
- 1/4 cup of Miracle Whip
- 2 Tbsp of yellow mustard
- 2 Tbsp of sweet relish
- 1/4 cup of halved grapes
- 1 Tbsp of chopped or shaved almonds
Directions:
- Drain water from chicken can and mash/shred with a spoon or fork.
- Combine chicken, miracle whip, mustard, & relish in mixing bowl.
- Cut grapes in half & chop up almonds. Add to the bowl & mix well.
- Serve with crackers or on a sandwich!
- Refrigerate for later use!

I love putting fruit in my chicken salad! I usually do apples or craisins, but definitely giving grapes a try!
